 How to Make Authentic Moroccan Couscous: A Flavorful Recipe for Your Kitchen



Do you find making couscous difficult and time-consuming? Well, from today, I’ve got the perfect solution for you!👌

Ingredients:

  •  Half a chicken or meal
  •  Half a kilo of fine couscous
  •  Two chopped onions
  •  Grated tomato and another tomato cut into quarters
  •  A bunch of coriander

-Seven vegetables:

  • Carrots – Adds sweetness and color.
  • Zucchini (Green squash) – Softens easily and soaks up the spices.
  • Turnips – Provides a slightly peppery taste.
  • Cabbage – Offers a mild, slightly sweet flavor.
  • Eggplant – Adds a unique, soft texture.
  • Pumpkin or Butternut Squash – Sweet and rich in flavor.
  • Tomatoes – Both grated and quartered tomatoes are often used for the sauce and flavor.
  • - I marinated the chicken overnight with salt, ginger, pepper, ghee, turmeric, and saffron stock cube.

    Preparation Method:

  • In a pressure cooker, add chopped onion, chicken, grated tomato, 4 tablespoons of oil, a bit of ghee, turmeric, saffron, pepper, and ginger. Sauté the chicken, then add water and close the lid.
  • For the couscous, add a teaspoon of salt and 4 tablespoons of oil, mixing well. Then add two handfuls of water (about half a cup) and place the couscous in the steamer. Steam until steam rises and it begins to cook.
  • Remove the couscous from the steamer and add 4 to 5 cups of cold water, mixing well until it absorbs the water. Don't add more salt, and let it rest for about 15 minutes.
  • Open the pressure cooker, take out the chicken carefully, and add chopped carrots, cabbage, turnips, quartered tomatoes, and chickpeas. Ensure the vegetables are heated to avoid overcooking. Close the lid and let it cook for another 15 minutes until the pressure indicator shows.
  • For the Filling On :(optionnal)

    • 2 medium-sized onions, sliced
    • 1 cup raisins
    • 2-3 tablespoons sugar (to taste)
    • 1 teaspoon cinnamon
    • 1/4 cup almonds or walnuts (optional, toasted and chopped)
    • 2-3 tablespoons olive oil
    • 1 teaspoon saffron (optional
    Take the couscous, add oil, and mix well, then return it to the steamer for another round of steaming.


    Once done, your vegetables should be cooked. Serve the couscous with the chicken and vegetables on top. Enjoy your meal! 🌹
